This take on corn on the cob transforms this summer classic into an appetizer or side dish that’s perfect for any occasion!

Ingredients:

  • 4 ears of fresh corn
  • Water for boiling
  • Vegetable oil for brushing

For the Sauce:

  • 2 tablespoons vegan butter
  • 1/4 cup hot sauce (adjust to your preferred spice level)
  • 1 teaspoon garlic powder
  • 1 tablespoon vegan Worcestershire sauce

Optional Toppings:

  • Vegan cream
  • Vegan cheese (shredded)
  • Fresh cilantro leaves (chopped)

Instructions:

  1. Prepare the Corn Ribs:
    • Start with fresh corn on the cob.
    • Remove the husks and silk from each ear of corn.
    • Use a sharp knife to trim off the pointed edge of each ear.
    • Cut the corn in half so you have two shorter pieces.
    • Transfer the corn halves to a large pot.
  2. Boil the Corn:
    • Cover the corn halves with water in the pot.
    • Bring the water to a boil and cook the corn until it’s tender, about 8-10 minutes.
    • Drain the boiled corn and let it cool slightly.
  3. Go back to the Corn Ribs:
    • Once the corn has cooled down a bit, cut each half in half again lengthwise. You should have four corn rib sections per ear of corn.
    • Place the corn rib sections on a baking tray.
    • Preheat your oven to 400°F (200°C).
    • Brush the corn rib sections with vegetable oil, ensuring they are evenly coated.
    • Place the baking tray with the corn ribs in the preheated oven.
    • Bake for 15 minutes or until the corn ribs become slightly crispy and golden brown.
  4. Prepare the Sauce:
    • In a small saucepan, melt the vegan butter over low heat.
    • Add the hot sauce, garlic powder, and vegan Worcestershire sauce to the melted butter.
    • Stir the sauce mixture until everything is well combined and heated through. Remove from heat.
  5. Coat the Corn Ribs with Sauce:
    • Transfer the baked corn ribs to a lidded container.
    • Pour the prepared sauce over the corn ribs.
    • Seal the container with a lid and shake it gently to ensure the corn ribs are well coated with the sauce.
  6. Serve and Enjoy:
    • Plate the corn ribs on a serving platter.
    • If desired, top them with vegan cream, shredded vegan cheese, and chopped cilantro for added flavor and presentation.
