With that in mind, we decided to share with you, our own recipe for one of Eilish’s favorite vegan dishes, her Vegan Soup.



  • Rice noodles
  • hot water

Vegan Broth

  • 2 cups hot water
  • 1 tbsp of vegan bouillon
  • ½ cup of scallions
  • ¾ cup of chili flakes
  • ½ block of tofu

Step 1

Cook the rice noodles in boiling water until they are soft. Usually, around 10 minutes in a hot wave.

Step 2

Dissolve the tablespoon of vegan bouillon in the 2 cups of hot water.

Step 3

Add the scallions and half of the chili flakes into the mixture.

Step 4

Chop the tofu into tiny blocks and mix it with the broth mixture on the serving plates. 

Step 5

Add the noodles into the broth, add the rest of the chili flakes, and your dish is done!
